Prawns Del Cabo Wabo

Traditional Mexican food is healthy and bursting with fresh flavors. The blend of fresh organic herbs and citrus vinaigrette in this prawns recipe is a tribute to those enormous flavors.

Equipment

  • 1 flat griddle or sauté pan
  • 1 food processor
  • 1 Stainless steel tower mold (2 inch x 2 inch cube)

Ingredients

  •  
    6 Wild Mexican Prawns (size 21-25 per lb)
  •  
    1 tsp Extra virgin olive oil
  •  
    1 pinch Fresh garlic, diced small
  •  
    1 pinch Fresh organic basil, julienne-sliced
  •  
    1 pinch Duke's Superb Herb Blend (see below)
  •  
    1 Tbsp Fresh organic cilantro, diced small
  •  
    2 Tbsp Sinful Citrus Vinaigrette (see below)
  •  
    Avocado Tower Salad (see below)

Sinful Citrus Vinaigrette

  •  
    1 Egg
  •  
    2 Tbsp Fresh whole garlic cloves
  •  
    2 Tbsp Fresh organic basil leaves, stems removed
  •  
    3/4 tsp Kosher salt
  •  
    1.5 tsp Fresh cracked black pepper
  •  
    1 cup + 2 Tbsp Extra virgin olive oil
  •  
    1/4 cup Freshly squeezed lemon juice

Avocado Tower Salad

  •  
    1/2 Fresh avocado, diced medium
  •  
    2 Tbsp Dukecumber Pico de Gallo (see below)
  •  
    Juice from half of a lime
  •  
    1 tsp Extra virgin olive oil
  • Duke's Seafood Ready-Anytime Spice Blend1 pinch Duke’s Ready Anytime Seasoning
  •  
    1/2 tsp Duke's Superb Herb Blend (see below)

Duke's Superb Herb Blend

  •  
    1 Tbsp Fresh organic rosemary, stems removed, diced small
  •  
    1 Tbsp Fresh organic thyme, stems removed, diced small
  •  
    1 Tbsp Fresh organic oregano, stems removed, diced small

Dukecumber Pico de Gallo

  •  
    1 cup Ripe tomato, diced
  •  
    1/4 cup Green onions, green parts only, diced small
  •  
    1 cup Cucumber, peeled, seeds removed and diced small
  •  
    1/2 tsp Crushed red pepper
  •  
    Juice from 1 lemon
  •  
    1/2 tsp Kosher salt
  •  
    1/4 bunch Cilantro, stems removed, diced medium

Instructions

  • Peel, devein, rinse and dry Prawns
  • Marinate with extra virgin olive oil, garlic, basil, and Duke's Superb Herb Blend for at least 1 hour.
  • Sear Prawns on a hot flat griddle or sauté pan and arrange on plate.

Duke's Superb Herb Blend

  • Mix all ingredients and store in an airtight container.

Sinful Citrus Vinaigrette

  • Place egg in a food processor and blend for 2 minutes until frothy. While mixing, blend in garlic and basil until smooth. Add salt and pepper. In a thin, constant stream, slowly add olive oil (too fast and the dressing will separate). Add lemon juice and mix just until smooth.

Avocado Tower Salad

  • Gently combine ingredients (do not overmix or the avocado will turn to mush). Place in a stainless steel tower mold (approximately 2-inch by 2-inch cube); then release on plate.

Dukecumber Pico de Gallo

  • Mix all ingredients and refrigerate.
